This is a cow’s milk cheese from that is made in Switzerland. It has been aged for at least six months by cheese affineur, Rolf Beeler. It has aromas of brown butter and hazelnuts. It is just exquisite. My husband and I visited the Appenzeller region of Switzerland last year and were captivated by its beauty. We stopped in the town of Appenzeller for lunch and enjoyed a nice cheese salad (first cheese salad I had ever tried).
